Any How Fried Rice



PREPARATION TIME: 15 mins
COOkING TIME: 10 mins
SERVES: 1

Ingredients:-

1 1/2 cups a day old cooked white rice (add 1/2tsp salt; combine well)
10gms dried anchovies/ikan bilis (wash and drain)
1 medium red onion (chopped)
2 cloves garlic (chopped)
50gms cabbage (shreded)
1 egg (beated)
1/2 fresh red chilli
1/2 tsp chilli powder
Coriander leaves for garnishing
1 tbs Oil for saut'eeing

Seasonings:
1/2 tsp light soy
A dash of white pepper

Method:
Heat oil in a wok or pan. Add anchovies, stir, leave till brown and crispy. Stir in onions and fry till fragrant followed by garlic. Add in the egg and stir till cooked but still runny. Add in rice and cabbage. Mix well and leave till cabbage is wilted with a bit of a crunch. Add seasonings and chilli. Stir well, avoid letting rice become claggy. Garnish with coriander leaves and serve while still hot.
